‘I had the honour of meeting this lovely lady behind the brand at a vegan festival and her passion for her product is incredible just like the taste , this spread is the perfect flavour as I like a lot of vegan cheeses doesn’t have that strong overwhelming coconut oily flavour and is instead mild , creamy and just like how I remember cheese 🧀 to be , the closest thing I’ve tried and have the approval of my non vegan parents who are cheese a holicks so high praise indeed and great paired with pickle on crackers and toast 😉 ‘

Vegan Frittata Recipe

🌱Vegan Frittata🌱

I’ve taken some inspiration from my good friend @dawnsplantkitchen after looking at her new recipe blog over the weekend.

Do pop over to her page if you haven’t seen it yet. There are some mouthwatering vegan delights to be found there! 😋

My recipe is slightly different though as I’m feeding the whole fam…

Ingredients:
1 cup chickpea flour (gram flour)
1 cup of cold water
1/2 tsp turmeric
Pinch of kala namak salt (optional)
2tsp dried parsley
4tbsp avocado oil
Sea salt and black pepper to season
1 cup of cashew cream (1/2 cup raw cashews softened in boiling water then blended with 1/2 cup unsweetened almond milk & 4 tbsp nutritional yeast)
2-3 cups of roasted veg of choice

Method:
Pop everything except the veg into your blender and blitz to smooth.

Pour over your roasted veg (I’ve used red peppers, courgette and also some wilted spinach) into a lined round 8” cake tin, and this bit is optional but I do like to sprinkle a good helping of @goodcarmafoods Flavour Fusion in top, before it’s baked at 180c for 25 minutes.

You can check it’s set with a skewer or sharp knife.

Allow to cool for 10 minutes, gently remove from the cake tin then enjoy with a tasty side salad. 💚

Happy St David’s Day from Wales! 

As you know we are based in West Wales and so this is why we are celebrating today and it’s Shrove Tuesday. I shall be having gluten free pancakes later with our Spread Sensation on. Yummy!

Cheesy Stuffed Portbello Mushrooms

Ingredients:
– 2 portobello mushrooms (stalks removed)
– 60g cream cheese
– Handful of chopped spinach
– 1 garlic clove
– 1/2 shallot
– 25g vegan mozzarella
– 1/2tsp oregano
– handful of fresh chives
– S&P & chilli flakes
– 25g breadcrumbs
– approx 6g vegan parmesan (as much as you like!!)
– 3/4 tbsp butter

Method:
– Pre-heat oven to gas mark 6 (200 degrees Celsius)
– Place shrooms stalk down on a baking tray and bake for 10mins
– Mix together in a bowl: the cream cheese, mozzarella, spinach, garlic, shallot, oregano, S&P, a pinch of chilli flakes & half of the chives.
– In a separate bowl mix together the breadcrumbs, butter, parmesan & remaining chives.
– Fill mushrooms with the cream cheese mixture and top with the breadcrumbs.
– Oven for 15mins or until golden

Garlic Mushroom & Fennel Risotto

Garlic Mushroom & Fennel Risotto 🍄

Chop some mushrooms and chuck in a pan with a little oil and a generous teaspoon of fennel seeds. 🥄

Cook for a few mins while you slice up some fresh garlic, add this to the pan with some dried chillis if you like spicing things up 🌶

Drain a tin of @napolina Spelt and add to the pan. 🌱 chuck a few peas in too if you like them 😋

Make up a stock (half a litre) with your favourite stock powder – I use @marigoldengevita – then add it to the pan a third at a time allowing it to absorb each time. 🧑🏻‍🍳 Finally add a couple of large spoons of our Flavour Fusion Garlic https://goodcarmafoods.com/shop/flavour-fusion/garlic/ . Stir and serve! 🍽
